A fast food restaurant, sometimes known as a quick service restaurant or QSR, is a specific type of restaurant characterized both by its fast food cuisine and by minimal table service. Food served in fast food restaurants typically caters to a Western-style diet; is cooked in bulk in advance and kept hot to order; and is usually available ready to take away, though seating is provided. Fast food restaurants are usually part of a restaurant chain or franchise operation, which ships standardized foodstuffs to each restaurant from central locations.

The first fast food restaurants originated in the United States of America during the 1950s. Today, American-founded fast food chains such as McDonald's and Pizza Hut are multinational corporations with outlets across the globe.

Variations on the fast food restaurant concept include fast casual restaurants and catering trucks. Fast casual restaurants have higher sit-in ratios, and customers can sit and have their orders brought to them. Catering trucks often park just outside worksites and are popular with factory workers.

The modern history of fast-food in America began on July 7, 1912 with the opening of a fast food restaurant called the Automat in New York. The Automat was a cafeteria with its prepared foods behind small glass windows and coin-operated slots. Joseph Horn and Frank Hardart had already opened an Automat in Philadelphia, but their Automat at Broadway and 13th Street, in New York City, created a sensation. Numerous Automat restaurants were quickly built around the country to deal with the demand. Automats remained extremely popular throughout the 1920s and 1930s. The company also popularized the notion of take-out food, with their slogan Less work for Mother. The American company White Castle is generally credited with opening the second fast-food outlet in Wichita, Kansas in 1921, selling hamburgers for five cents apiece. Among its innovations, the company allowed customers to see the food being prepared. White Castle later added five holes to each beef patty to increase its surface area and speed cooking times. White Castle was successful from its inception and spawned numerous competitors. Main article: History of McDonald's

McDonald's, the largest fast-food chain in the world and the brand most associated with the term "fast food," was founded as a barbecue drive-in in 1940 by Dick and Mac McDonald. After discovering that most of their profits came from hamburgers, the brothers closed their restaurant for three months and reopened it in 1948 as a walk-up stand offering a simple menu of hamburgers, french fries, shakes, coffee, and Coca-Cola, served in disposable paper wrapping. As a result, they were able to produce hamburgers and fries constantly, without waiting for customer orders, and could serve them immediately; hamburgers cost 15 cents, about half the price at a typical diner. Their streamlined production method, which they named the "Speedee Service System" was influenced by the production line innovations of Henry Ford. The McDonalds' stand was the milkshake machine company's biggest customer and a milkshake salesman named Ray Kroc traveled to California to discover the secret to their high-volume burger-and-shake operation. Kroc thought he could expand their concept, eventually buying the McDonalds' operation outright in 1961 with the goal of making cheap, ready-to-go hamburgers, french fries and milkshakes a nationwide business.

Kroc was the mastermind behind the rise of McDonald's as a national chain. The first part of his plan was to promote cleanliness in his restaurants. Kroc often took part at his own Des Plaines, Illinois, outlet by hosing down the garbage cans and scraping gum off the cement. Kroc also added great swaths of glass which enabled the customer to view the food preparation. This was very important to the American public which became quite germ conscious. A clean atmosphere was only part of Kroc's grander plan which separated McDonald's from the rest of the competition and attributes to their great success. Kroc envisioned making his restaurants appeal to suburban families.

Service

While fast food restaurants usually have a seating area in which customers can eat the food on the premises, orders are designed to be taken away, and traditional table service is rare. Orders are generally taken and paid for at a wide counter, with the customer waiting by the counter for a tray or container for their food. A "drive-thru" service can allow customers to order and pick up food from their cars.

Nearly from its inception, fast food has been designed to be eaten "on the go" and often does not require traditional cutlery and is eaten as a finger food. Common menu items at fast food outlets include fish and chips, sandwiches, pitas, hamburgers, fried chicken, french fries, chicken nuggets, tacos, pizza, and ice cream, although many fast-food restaurants offer "slower" foods like chili, mashed potatoes, and salads.

Cuisine

Modern commercial fast food is highly processed and prepared on a large scale, with bulk ingredients and standardised cooking and production methods. It is usually rapidly served in cartons or bags or in a plastic wrapping, in a fashion which minimizes cost. In most fast food operations, menu items are generally made from processed ingredients prepared at a central supply facility and then shipped to individual outlets where they are reheated, cooked (usually by microwave or deep-frying) or assembled in a short amount of time. This process ensures a consistent level of product quality, and is key to being able to deliver the order quickly to the customer and eliminate labor and equipment costs in the individual stores.

Because of commercial emphasis on speed, uniformity and low cost, fast food products are often made with ingredients formulated to achieve a certain flavor or consistency and to preserve freshness. This requires a high degree of food engineering, the use of additives and processing techniques substantially alter the food from its original form and reduce its nutritional value.

Value meals

A value meal is a group of menu items offered together at a lower price than they would cost individually. They are common at fast food restaurants. Value meals are a common merchandising tactic to facilitate bundling, up-selling, and price discrimination. The perceived creation of a "discount" on individual menu items in exchange for the purchase of a "meal" is also consistent with the Loyalty Marketing school of thought.

Technology

In able to make speedy service possible and to ensure accuracy and security, many fast food restaurants have incorporated Hospitality point of sale systems. This makes it possible for kitchen crew people to view orders place at front counter and drive through in real time. Wireless systems allow orders placed at drive through speakers to be taken by cashiers and cooks. Drive through and walk through configurations will allow orders to be taken at one register and paid at another. Modern point of sale systems can operate on computer networks using a variety of software programs. Sales records can be generated and remote access to computer reports can be given to corporate offices, managers, troubleshooters and other authorized personal.

Consumer spending

In the United States alone, consumers spent about US$110 billion on fast food in 2000 (which increased from US$6 billion in 1970). The National Restaurant Association forecasts that fast-food restaurants in the U.S. will reach US$142 billion in sales in 2006, a 5% increase over 2005. In comparison, the full-service restaurant segment of the food industry is expected to generate $173 billion in sales. Fast food has been losing market share to so-called fast casual restaurants, which offer more robust and expensive cuisines.

Major brands

McDonald's, a noted fast-food supplier, opened its first franchised restaurant in the US in 1955 (1974 in the UK). It has become a phenomenally successful enterprise in terms of financial growth, brand-name recognition, and worldwide expansion. Ray Kroc, who bought the franchising license from the McDonald brothers, pioneered many concepts which emphasized standardization. He introduced uniform products, identical in all respects at each outlet, to increase sales. At the same time, Kroc also insisted on cutting food costs as much as possible, eventually using the McDonald's Corporation's size to force suppliers to conform to this ethos.

Other prominent international fast food companies include Burger King, the number two hamburger chain in the world, known for promoting its customized menu offerings (Have it Your Way); Wendy's, the number three burger chain and creator of the Drive thru concept; Dunkin' Donuts, a New England based chain that emphasized and refined the commissary model of food preparation; Starbucks, Seattle-born coffee-based fast food beverage corporation; KFC, a part of the largest restaurant chain in the world, Yum! Brands; and Dominos Pizza, a pizza chain known for popularizing home delivery of fast food.

Subway restaurants are known for their sub sandwiches and Subway is the largest restaurant chain to serve such food items. The Subway restaurant chain is the fastest growing restaurant chain in the world surpassing even McDonald's. Subway has the second most stores of any chain restaurant system in the world after McDonald's. Quiznos, a Denver based sub shop is another fast growing sub chain. With over 6,000 locations it is still far behind Subway's 28,000 locations. Other smaller sub shops include Blimpie and Mr. Goodcents.

Regional chains

Many fast food operations have more local and regional roots, such as White Castle in the Midwest United States, along with Hardee's (owned by CKE Restaurants, which also owns Carl's Jr., whose locations are primarily on the United States West Coast), Krystal, Bojangles', and Zaxby's restaurants in the American Southeast, Raising Cane's in Louisiana, the famous In-N-Out Burger (in California, Arizona, and Nevada) and Tommy's chains in Southern California, Dick's Drive-In in Seattle Washington, and Arctic Circle in Utah and other western states. Also, Whataburger is a popular burger chain in the South and Mexico. Canada pizza chains Topper's Pizza and Pizza Pizza are primarily located in Ontario. Coffee chain Country Style operates only in Ontario, and competes with the famous coffee and donut chain Tim Hortons and Dunkin Donuts.

International chains

The fast-food industry is popular in the United States, the source of most of its innovation, and many major international chains are based there. Seen as symbols of US dominance and perceived cultural imperialism, American fast-food franchises have often been the target of Anti-globalization protests and demonstrations against the US government. In 2005, for example, rioters in Karachi, Pakistan, who were initially angered because of the bombing of a Shiite mosque, destroyed a KFC restaurant.

Multinational corporations typically modify their menus to cater to local tastes and most overseas outlets are owned by native franchisees. McDonald's in India, for example, uses lamb rather than beef in its burgers because Hinduism traditionally forbids eating beef. In Israel the majority of McDonald's restaurants are kosher and respects the Jewish shabbat, there is also a kosher McDonald's in Argentina. In Egypt and Saudi Arabia, all menu items are halal.

In Canada the majority of fast food chains are American owned, or were originally American owned but have since set up a Canadian management/headquarters location in cities such as Toronto and Vancouver. Although the case is usually American fast food chains expanding into Canada, Canadian chains such as Tim Hortons have expanded into 10 states in the United States, but are more prominent in border states such as New York and Michigan.

In the United Kingdom, many home based fast food operations were closed in the 1970s and 1980s after McDonald's became the number one outlet in the market. However, brands like Wimpy still remain, although the majority of branches became Burger King in 1989. In France and Belgium, Quick is a popular alternative to McDonald's and Burger King.

Traditional ramen and sushi restaurants still dominate fast food culture in Japan, although American outlets like Pizza Hut, McDonald's and KFC are also popular, along with Western-style Japanese chains like Mos Burger.

In Africa, Mr. Bigg's and Tantalizers are the predominant fast food chains in Nigeria, while Nando's and Steers are predominant in South Africa.

Trends

Health concerns

Some of the large fast-food chains are beginning to incorporate healthier alternatives in their menu, e.g., white meat, snack wraps, salads and fresh fruit. However, some people see these moves as a tokenistic and commercial measure, rather than an appropriate reaction to ethical concerns about the world ecology and people's health. McDonald's announced that in March of 2006, the chain would include nutritional information on the packaging of all of its products. .

Consumer appeal

Fast-food outlets have become popular with consumers for several reasons. One is that through economies of scale in purchasing and producing food, these companies can deliver food to consumers at a very low cost. In addition, although some people dislike fast food for its predictability, it can be reassuring to a hungry person in a hurry or far from home.

In the post-war period in the United States, fast food chains like McDonald's rapidly gained a reputation for their cleanliness, fast service and a child-friendly atmosphere where families on the road could grab a quick meal, or seek a break from the routine of home cooking. Prior to the rise of the fast food chain restaurant, people generally had a choice between greasy-spoon diners where the quality of the food was often questionable and service lacking, or high-end restaurants that were expensive and impractical for families with children. The modern, stream-lined convenience of the fast food restaurant provided a new alternative and appealed to Americans' instinct for ideas and products associated with progress, technology and innovation. Fast food restaurants rapidly became the eatery "everyone could agree on", with many featuring child-size menu combos, play areas and whimsical branding campaigns, like the iconic Ronald McDonald, designed to appeal to younger customers. Parents could have a few minutes of peace while children played or amused themselves with the toys included in their Happy Meal. There is a long history of fast food advertising campaigns, many of which are directed at children.

In other parts of the world, American and American-style fast food outlets have been popular for their quality, customer service and novelty, even though they are often the targets of popular anger towards American foreign policy or globalization more generally. Many consumers nonetheless see them as symbols of the wealth, progress and well-ordered openness of Western society and therefore become trendy attractions in many cities around the world, particularly among younger people with more varied tastes.

A cafeteria is a type of food service location in which there is little or no table service, whether a restaurant or within an institution such as a large office building or school; a school dining location is also referred to as a canteen or dining hall. Cafeterias are different from coffeehouses, although that is the Spanish origin of the American word.

Instead of table service, there are food-serving counters/stalls, either in a line or allowing arbitrary walking paths. Customers take the food they require as they walk along, placing it on a tray. In addition, there are often stations where customers order food and wait while it is prepared, particularly for items such as hamburgers or tacos which must be served hot and can be quickly prepared. Alternatively, the patron is given a number and the item is brought to their table. Sometimes, for some food items and drinks, customers collect an empty container, pay at the check-out, and fill the container after the check-out. Free second servings are often allowed under this system. For legal purposes (and the consumption patterns of customers), this system is rarely or never used for alcoholic beverages.

Customers are either charged a flat rate for admission (as in a buffet), or pay at the check-out for each item. Some self-service cafeterias charge by the weight of items on a patron's plate.

As cafeterias require few employees, they are often found within a larger institution, catering to the clientele of that institution. For example, schools, colleges and their residence halls, department stores, hospitals, museums, and office buildings often have cafeterias.

At one time, upscale cafeteria-style restaurants dominated the culture of the Southern United States, and to a lesser extent the Midwest. There were several prominent chains of them: Bickford's, Morrison's Cafeteria, Apple House, K&W, Britling, and Blue Boar among them. Currently two still exist, Sloppy Jo's Luchroom and Manny's, both located in Illinois. There were also a number of smaller chains, usually in and around a single city. These institutions, with the exception of K&W, went into a decline in the 1960s with the rise of fast food and were largely finished off in the 1980s by the rise of "casual dining". A few chains notably Luby's and Piccadilly Cafeterias (which took over the Morrison's chain), continue to fill some of the gap left by the decline of the older chains. Many of the smaller Midwestern chains, such as MCL Cafeterias centered around Indianapolis, are still very much in business.

The world's largest non-military cafeteria is in the Brody Complex at Michigan State University.

History

The cafeteria as it is known in the United States originated in Los Angeles in the very late 19th century. It derives from earlier food service traditions brought to California from Mexico by immigrants. The name Cafeteria is in fact Spanish, and roughly means "coffee shop." In California the self-service style became more streamlined, with probable influence from the factory assembly lines coming into vogue at that time, and American-style foods were served, although in California cafeterias (restaurant and institutional iterations both) Mexican style dishes continued to be available alongside standard American fare. In the early 20th Century dozens of cafeterias stood in Los Angeles. Today, Clifton's Cafeteria is the only remaining cafeteria from that era. It opened in 1935 and is decorated to resemble a mountain wonderland in the manner of Yosemite National Park.

Other Countries

A school cafeteria in Australia is called a canteen and is not set up like in the US. Service is much more like a takeaway store with patrons approaching a counter and ordering food, and paying at the register.

Australian university and hospital cafeterias are similar with the exception that payment is required per meal - charges may be per person (all you can eat), per serve, per plate or by weight.

Other names

A cafeteria in a U.S. military installation is known as either a chow hall, a mess hall, or, more correctly, a dining facility, whereas in common British armed forces parlance, it is known as a cookhouse or mess. Some monasteries and boarding schools refer to their cafeteria as a refectory. Students in the USA often refer to cafeterias as lunchrooms, though breakfast as well as lunch is often eaten there. Cafeterias serving university dormitories are sometimes called dining halls or dining commons. A food court is a type of cafeteria found in many shopping malls and airports featuring multiple food vendors or concessions, although a food court could equally be styled as a type of restaurant as well, being more aligned with public, rather than institutionalised, dining.

College cafeteria

A college cafeteria is a term in the United States that denotes a cafeteria that is designed to serve college students at the university. Also see the different meanings of the word college around the Anglosphere. These cafeterias can be a part of a residence hall or in a separate building. Many of these colleges employ their own students to work in the cafeteria. The amount of meals served to students varies from school to school, but is normally around 20 meals per week. Like normal cafeterias, a person will have a tray to select the food that they want, but instead of paying money, they pay beforehand by purchasing a meal plan.

The method of payment for college cafeterias is commonly in the form of a meal plan, whereby the patron pays a certain amount at the start of the semester and the details of the plan are stored on a computer system. Student ID cards are then used to access the meal plan. A meal plan is not necessary to eat at a college cafeteria however. Meal plans can vary widely in their details to best fit the needs of the students. Typically, the college tracks the student's usage of their plan by counting either the number of pre-defined meal servings, points, dollars, or number of buffet dinners. The plan may give the student a certain number of any of the above per week or semester and they may or may not roll over to the next week or semester.

Many schools offer several different options for using their meal plans. The main cafeteria is usually where most of the meal plan is used but smaller cafeterias, caf?s, restaurants, bars, or even fast food chains located on campus may accept meal plans. A college cafeteria system often has a virtual monopoly on the students due to an isolated location or a requirement that residence contracts include a full meal plan. It is not uncommon for the entire food service operation to be outsourced to a managed services company such as Aramark, Sodexho and Compass Group (under the Scolarest name in the United Kingdom).

Fast Casual-Dining Restaurants

A fast casual restaurant is a type of restaurant which is similar to a fast-food restaurant in that it does not offer full table service, but promises a somewhat higher quality of food and atmosphere. It is a growing concept to fill the space between fast-food and casual dining. The typical cost per guest is in the $6-$10 range.

Counter service accompanied by handmade food (often visible via an open kitchen) is typical. Alcohol may be served. Dishes like steak may be offered. The menu is usually limited to an extended over-counter display, and options in the way the food is prepared are emphasized. Health-conscious items have a larger than normal portion of the menu, and some restaurants may emphasize high quality ingredients like free-range chicken and freshly made salsas; Overall, the quality of the food is presented as much higher than conventional factory-made fast food. While full table service is not offered, conveniences like non-plastic utensils and plates are common.

The moderate volume music and nontraditional decor pioneered by Starbucks are fully embraced by fast casual restaurants - approximately half of the customers eat in the establishment, compared with a quarter of fast food customers.

A coffeehouse [a] (French/Spanish/Portuguese: cafe; Italian: caff?, German: cafe or Kaffeehaus, Turkish: Kahvehane) shares some of the characteristics of a bar, and some of the characteristics of a restaurant, but it is different from a cafeteria. As the name suggests, coffeehouses focus on providing coffee and tea as well as light snacks. This differs from a cafe, which is an informal restaurant, offering a range of hot meals, and possibly being licensed to serve alcohol. Many coffee houses in the Muslim world, and in Muslim districts in the West, offer shisha, powdered tobacco smoked through a hookah. In establishments where it is tolerated - which may be found notably in the Netherlands, especially in Amsterdam - cannabis may be smoked as well.

From a cultural standpoint, coffeehouses largely serve as centers of social interaction: the coffeehouse provides social members with a place to congregate, talk, write, read, entertain one another, or pass the time, whether individually or in small groups.

Since the 15th century, the coffeehouse (al-maqhah in Arabic, qahveh-khaneh in Persian or Kahvehane or k?raathane in Turkish) has served as a social gathering place in Middle Eastern countries where men assemble to drink coffee (usually Arabic coffee) or tea, listen to music, read books, play chess and backgammon, and perhaps hear a recitation from the works of Antar or from Shahnameh. In 1457 the first coffeehouse, Kiva Han, was opened in Istanbul, just four years after its conquest by the Ottomans. Coffeehouses in Mecca soon became a concern as places for political gatherings to the imams who banned them, and the drink, for Muslims between 1512 and 1524. In 1530 the first coffee house was opened in Damascus , and not long after there were many coffee houses in Cairo.

In the 17th century, coffee appeared for the first time in Europe outside the Ottoman Empire, and coffeehouses were established and quickly became popular. The first coffeehouses in Western Europe appeared in Venice, due to the traffics between La Serenissima and the Ottomans; the very first one is recorded in 1645. The first coffeehouse in England was set up in Oxford in 1650 by a Jewish man named Jacob. Oxford's Queen's Lane Coffee House, established in 1654, is still in existence today. The first coffeehouse in London was opened in 1652 in St Michael's Alley, Cornhill. The proprietor was Pasqua Ros?e, the Armenian servant of a trader in Turkish goods named Daniel Edwards, who imported the coffee and assisted Ros?e in setting up the establishment.Boston had its first in 1670. Pasqua Ros?e also established Paris' first coffeehouse in 1672 and held a city-wide coffee monopoly until Francesca Procopio dei Coltelli opened The Cafe Le Procope in 1686 . This coffeehouse, still exists today and was a major locus of the French Enlightenment; Voltaire, Rousseau, and Diderot frequented it, and it is arguably the birthplace of the Encyclop?die, the first modern encyclopedia.

Though Charles II later tried to suppress the London coffeehouses as "places where the disaffected met, and spread scandalous reports concerning the conduct of His Majesty and his Ministers", the public flocked to them. They were great social levellers, open to all men and indifferent to social status, and as a result associated with equality and republicanism. More generally, coffee houses became meeting places where business could be carried on, news exchanged and the London Gazette (government announcements) read. Lloyd's of London had its origins in a coffeehouse run by Edward Lloyd, where underwriters of ship insurance met to do business. By 1739 there were 551 coffeehouses in London; each attracted a particular clientele divided by occupation or attitude, such as Tories and Whigs, wits and stockjobbers, merchants and lawyers, booksellers and authors, men of fashion or the "cits" of the old city center. According to one French visitor, the Abb? Pr?vost, coffeehouses, "where you have the right to read all the papers for and against the government," were the "seats of English liberty."

The banning of women from coffehouses was not universal, but does appear to have been common in Europe. In Germany women frequented them, but in England and France they were banned. ?milie du Ch?telet purportedly wore drag to gain entrance to a coffehouse in Paris . In a well-known engraving of a Parisian coffeehouse of c. 1700 , the gentlemen hang their hats on pegs and sit at long communal tables strewn with papers and writing implements. Coffeepots are ranged at an open fire, with a hanging cauldron of boiling water. The only woman present presides, decently separated in a canopied booth, from which she doles out coffee in tall cups.

The traditional tale of the origins of Viennese coffeehouses begins with the mysterious sacks of green beans left behind when the Turks were defeated in the Battle of Vienna in 1683. All the sacks of coffee were granted to the victorious Polish king Jan III Sobieski, who in turn gave them to one of his officers, Franciszek Jerzy Kulczycki. Kulczycki began the first coffeehouse in Vienna with the hoard. However, it is now widely accepted that the first coffeehouse was actually opened by an Armenian merchant named Johannes Diodato.

In London, coffeehouses preceded the club of the mid-18th century, which skimmed away some of the more aristocratic clientele. Jonathan's Coffee-House in 1698 saw the listing of stock and commodity prices that evolved into the London Stock Exchange. Auctions in salesrooms attached to coffeehouses provided the start for the great auction houses of Sotheby's and Christie's.

In Victorian England, the temperance movement set up coffeehouses for the working classes, as a place of relaxation free of alcohol, an alternative to the public house (pub).

Coffee shops in the United States arose from the espresso- and pastry-centered Italian coffeehouses of the Italian-American immigrant communities in the major U.S. cities, notably New York City's Little Italy and Greenwich Village, Boston's North End, and San Francisco's North Beach. Both Greenwich Village and North Beach were major haunts of the Beats, who became highly identified with these coffeehouses. As the youth culture of the 1960s evolved, non-Italians consciously copied these coffeehouses. Before the rise of the Seattle-based Starbucks chain, Seattle and other parts of the Pacific Northwest had a thriving countercultural coffeehouse scene; Starbucks standardized and mainstreamed this model.

In the United States, from the late 1950s onward, coffeehouses also served as a venue for entertainment, most commonly folk performers. This was likely due to the ease at accommodating a lone performer accompanying themself only with a guitar, even with limited floorspace; the political nature of much of 1960s folk music made the music a natural tie-in with coffeehouses with their above-referenced association with political action. A number of well known performers like Joan Baez and Bob Dylan began their careers performing in coffeehouses. Blues singer Lightnin' Hopkins bemoaned his woman's inattentiveness to her domestic situation due to her overindulgence in coffeehouse socializing, in his 1969 Coffeehouse Blues.

From the 1960s through the mid-1980s, many churches and individuals in the United States used the coffeehouse concept for outreach. They were often storefronts and had names like The Gathering Place (Riverside, CA), The Lost Coin (New York City), and Jesus For You (Buffalo, NY). Christian music (guitar-based) was performed, coffee and food was provided, and Bible studies were convened as people of varying backgrounds gathered in a casual "unchurchy" setting. These coffeehouses usually had a rather short life, about three to five years or so on average. An out-of-print book, published by the ministry of David Wilkerson, titled, A Coffeehouse Manual, served as a guide for Christian coffeehouses, including a list of name suggestions for coffeehouses.

Cafes, on warmer days, or in locations where smoking indoors is forbidden, may have an outdoor section (terrace, pavement or sidewalk cafe) with seats, tables and parasols. This is especially the case with European cafes. Cafes offer a more open public space compared to many of the traditional pubs they have replaced, which were more male dominated with a focus on drinking alcohol.

One of the original uses of the cafe, as a place for information exchange and communication, was reintroduced in the 1990s with the Internet cafe or Hotspot (Wi-Fi). The spread of modern style cafes to many places, urban and rural, went hand in hand with computers. Computers and Internet access in a contemporary-styled venue helps to create a youthful, modern, outward-looking place, compared to the traditional pubs, or old-fashioned diners that they replaced. In the mid 2000s, cafes commonly offer Internet access, just as they offer telephones and newspapers.

International variation

American coffee shops are also often connected with indie, jazz and acoustic music, and will often have them playing either live or recorded in their shops. Coffeehouses are often gathering places for underage youths who cannot go to bars.

In the United Kingdom, traditional coffeehouses as gathering places for youths fell out of favour after the 1960s, but the concept has been revived since the 1990s by chains such as Starbucks, Coffee Republic, Costa Coffee, and Caff? Nero as places for professional workers to meet and eat out or simply to buy beverages and snack foods on their way to and from the workplace.

In France, a cafe certainly serves alcoholic beverages. French cafes also often serve simple snacks such as sandwiches. They may or may not have a restaurant section. A brasserie is a cafe that serves meals, generally single dishes, in a more relaxed setting than a restaurant. A bistro is a cafe / restaurant, especially in Paris. Bistro food is supposed to be cheap, but in recent years bistros, especially in Paris, have become increasingly expensive.

In Australian cities, a traditional European cafe culture is thriving as a result of significant immigration from mainland Europe in the 19th century and 20th century. These establishments often cluster along certain streets and with the weather allowing curb side seating much of the year certain areas resemble a large party on a Friday or Saturday evening.

In Malaysia and Singapore, traditional breakfast and coffee shops are called kopi tiams.The word is a portmanteau of the Malay word for coffee (as borrowed and altered from the Portuguese) and the Hokkien dialect word for shop (?; POJ: ti?m). Menus typically feature simple offerings: a variety of foods based on egg, toast, and kaya, plus coffee, tea, and Milo, a malted chocolate drink which is extremely popular in Southeast Asia and Australasia, particularly Singapore and Malaysia.

A public house, usually known as a pub, is an establishment which serves alcoholic drinks especially beer for consumption on the premises, usually in a comfortable setting. Pubs originated in English-speaking countries, particularly in the United Kingdom and Ireland and are now found globally.

In North America, drinking establishments with a British or Irish name or theme are called pubs as well. Although the terms may have different connotations, there is no definitive difference between pubs, bars, taverns and lounges where alcohol is served commercially.

Traditionally, a pub which offers lodging may be called an inn or (more recently) hotel in the UK. Today many pubs, in the UK and Australia in particular, with the word "inn" or "hotel" in their name no longer offer accommodation, or in some cases have never done so. Some pubs often bear the name of "hotel" because they are in countries where stringent anti-drinking laws were once in force. Until 1976 in Scotland only hotels could serve alcohol on Sundays; .

One of the most common form of pub around the world is the Irish Pub, highlighted by its association with Guinness Stout and renowned for its 'Craic' (Irish for Fun).

There are approximately 60,000 public houses in the United Kingdom, with one in almost every city, town and village. In many places, especially in villages, a pub can be the focal point of the community, playing a similar role to the local church in this respect.

Public houses are culturally and socially different from places such as cafes, bars, bierkellers and brewpubs.

Pubs are social places based on the sale and consumption of alcoholic beverages, and most public houses offer a range of beers, wines, spirits, alcopops and soft drinks. Many pubs are controlled by breweries, so beer is often better value than wines and spirits, whilst soft drinks can be almost as expensive. Beer served in a pub may be cask ale or keg beer. All pubs also have a range of non-alcoholic beverages available. Traditionally the windows of town pubs are of smoked or frosted glass so that the client?le is obscured from the street. In the last twenty years in the UK and other countries there has been a move away from frosted glass towards clear glass, a trend which fits in with brighter interior d?cors.

The owner, tenant or manager (licensee) of a public house is known as the publican or landlord. Each pub generally has regulars; people who drink there regularly. The pub that people visit most often is called their local. In many cases, this will be the pub nearest to their home, but some people choose their local for other reasons: proximity to work, a traditional venue for their friends, the availability of a particular cask ale, non-smoking or formerly as a place to smoke freely, or maybe a darts team or pool table.

A society with a particular interest in the traditional British beers and the preservation of the 'integrity' of the public house is the Campaign for Real Ale, (CAMRA).

History

The inhabitants of the UK have been drinking ale since the Bronze Age, but it was with the arrival of the Romans and the establishment of the Roman road network that the first inns, in which the traveller could obtain refreshment, began to appear. By the time the Romans left, the beginnings of the modern pub had been established. They became so commonplace that in 965 King Edgar decreed that there should be no more than one alehouse per village.

The Royal Standard of England, a pub near Beaconsfield, England, is a present-day survivor that grew from a Saxon alehouse. The Saxon alewife would put a green bush up on a pole to let people know her brew was ready. As well as strong ale, small ale was made. A traveller in the early Middle Ages could obtain overnight accommodation in monasteries, but later a demand for hostelries grew with the popularity of pilgrimages and travel. The Hostellers of London were granted guild status in 1446 and in 1514 the guild became the Worshipful Company of Innholders. Traditional English ale was made solely from fermented malt. The practice of adding hops to produce beer was introduced from the Netherlands in the early 15th century. Alehouses would each brew their own distinctive ale, but independent breweries began to appear in the late 17th century. By the end of the century almost all beer was brewed by commercial breweries.

The 18th century saw a huge growth in the number of drinking establishments, primarily due to the introduction of gin. Gin was brought to England by the Dutch after the Glorious Revolution of 1688 and started to become very popular after the government created a market for grain that was unfit to be used in brewing by allowing unlicensed gin production, whilst imposing a heavy duty on all imported spirits. As thousands of gin-shops sprang up all over England, brewers fought back by increasing the number of alehouses. By 1740 the production of gin had increased to six times that of beer and because of its cheapness it became popular with the poor leading to the so-called Gin Craze. Over half of the 15,000 drinking establishments in London were gin-shops.

The drunkenness and lawlessness created by gin was seen to lead to ruination and degradation of the working classes. The distinction was illustrated by William Hogarth in his engravings Beer Street and Gin Lane. The Gin Act (1736) imposed high taxes on retailers but led to riots in the streets. The prohibitive duty was gradually reduced and finally abolished in 1742. The 1751 Gin Act however was more successful. It forced distillers to sell only to licensed retailers and brought gin-shops under the jurisdiction of local magistrates.

A bistro, or bistrot, is a familiar name for a type of small restaurant serving moderately priced simple meals in an unpretentious setting, especially in Paris, France. A bistro may not offer professional service or printed menus, and it will usually specialize in simple classic dishes such as steak au poivre, French onion soup, and coq au vin.

A cafe (also spelled cafe, pronounced /?k?fe?/ or /kfe?/) or coffee shop is an informal restaurant offering a range of hot meals and made-to-order sandwiches. This differs from a coffee house, which is a limited-menu establishment which focuses on coffee sales. Depending on the jurisdiction, a cafe may be licensed to serve alcohol. The term can also refer to bistro or a restaurant facility within a hotel. In some countries, however, a cafe is synonymous with a coffee house.

In small towns the local cafe is often the central gathering spot for conversation and meetings. Such cafes are especially popular for breakfasts. In central business districts (CBD) of larger cities cafes and coffee shops are often open only for breakfast and lunch, since their patrons leave the area after business hours.

"French cafes", especially those in Paris carry a full menu. American cafes may or may not serve alcoholic beverages, and the serving of coffee is incidental to the serving of food. British cafes, however, do not sell alcohol. In Europe, cafes often have an enclosed or outdoor section extending onto the sidewalk.

In the Netherlands, a cafe is an establishment selling liquor, as opposed to coffeeshop, which sells soft drugs (cannabis and hashish) and is typically not allowed to sell liquor.

In France, a brasserie is a caf? doubling as a restaurant with a relaxed setting, which serves single dishes and other meals. It can be expected to have professional service and printed menus (unlike a bistro which may have neither), but more informal eating hours than a full-fledged restaurant. Typically, a brasserie is open every day of the week and the same menu is served all day.

The word 'brasserie' is also French for brewery and, by extension, "the brewing business".

Arbor Brewing Company has named one of their original beers "Brasserie Blonde".

Family Style

"Family style", are restaurants that have a fixed menu and fixed price, usually with diners seated at a communal table such as on bench seats. More common in the 19th and early 20th century, they can still be found in rural communities, or as theme restaurants, or in vacation lodges. There is no menu to choose from, rather food is brought out in courses, usually with communal serving dishes, like at a family meal. Typical examples can include crabhouses, German-style beer halls, BBQ restaurants, hunting lodges. Some normal restaurants will mix elements of family style, such as a table salad or bread bowl that is included as part of the meal.

A more modern execution of this is big plates of food being delivered to the table and as above everyone helps themselves to as much or as little as they want. This is common with Chinese food.

In American usage, family-style restaurant is usually a synonym for a casual-dining restaurant.

A fast casual restaurant is a type of restaurant which is similar to a fast-food restaurant in that it does not offer full table service, but promises a somewhat higher quality of food and atmosphere. It is a growing concept to fill the space between fast-food and casual dining. The typical cost per guest is in the $6-$10 range.

Counter service accompanied by handmade food (often visible via an open kitchen) is typical. Alcohol may be served. Dishes like steak may be offered. The menu is usually limited to an extended over-counter display, and options in the way the food is prepared are emphasized. Health-conscious items have a larger than normal portion of the menu, and some restaurants may emphasize high quality ingredients like free-range chicken and freshly made salsas; Overall, the quality of the food is presented as much higher than conventional factory-made fast food. While full table service is not offered, conveniences like non-plastic utensils and plates are common.

The moderate volume music and nontraditional decor pioneered by Starbucks are fully embraced by fast casual restaurants - approximately half of the customers eat in the establishment, compared with a quarter of fast food customers.

The Michelin Guide (Le Guide Michelin) is a series of annual guide books published by Michelin for over a dozen countries. The term refers by default to the Michelin Red Guide, the oldest and best-known European hotel and restaurant guide, which awards the Michelin stars. Michelin also publishes Green Guides for travel and tourism, as well as several newer publications such as the Guide Voyageur Pratique (independent travel), Guide Gourmand (good-value eating-places), Guide Escapade (quick breaks) and Guide Coup de C?ur (hotels of character).

In 1900, Andr? Michelin published the first edition of a guide to France to help drivers maintain their cars, find decent lodging, and eat well while touring. It included addresses of things like gasoline distributors, garages, tire stockists, and public toilets.

The guide was distributed free until 1920. According to a story told by the Michelin brothers, the charge was introduced after a pile of guides was found propping up a workbench in a garage, showing that a free gift would not be taken seriously. In 1926, the guide introduced the star to note good cooking; two and three stars were added in the early 1930s. The cover of the guide was originally blue, but since 1931 has been red.

As motoring became more widespread, the star system was developed and guides to other countries introduced. Today a series of twelve guides lists more than 45,000 hotels and restaurants across Europe, and the guide to France has sold 30 million copies since it was introduced. There is now a country-wide Red Guide covering France, Austria, Netherlands, Belgium and Luxemburg, Italy, Germany, Spain and Portugal, Switzerland, and the UK and Ireland. The one covering France is still by far the most thorough. There is also a Red Guide covering the "Main Cities of Europe". The first guides for cities outside of Europe were published in 2005 for New York City and 2006 for San Francisco.

Guides for Tokyo, Los Angeles and Las Vegas were released in November 2007. Tokyo was awarded a total of 191 stars eight restaurants were given three stars, 25 two stars, and 117 one star. This is nearly twice as many as Paris' total and more than three times New York City's total.

Red and Green Guides

The Michelin Red Guide has historically had many more listings than its rivals, relying on an extensive system of symbols to describe each establishment in as little as two lines. Restaurants rated with a star also listed three specialities. Recently, however, very short summaries (2-3 lines) have been added for many establishments, for example 9,000 in France. These short summaries are written in the language of the country for which it is published, but the symbols are universal. The Red Guide uses anonymous inspections and does not charge for entries, unlike some restaurant and hotel guides which are in effect little more than advertising. Michelin claims to revisit establishments on average once every eighteen months in order to keep ratings up to date.

There is a Green Guide for each French region and many countries, regions, and cities outside France. Most Green Guides on France are available in several languages. They include background information and an alphabetical section describing points of interest. Like the Red Guide, they use a three-star system for recommending sights: three stars, "worth the trip"; two stars, "worth a detour"; one star, "interesting".

Michelin stars and other ratings

The guide's restaurant ratings using Michelin stars are probably the most recognized and influential culinary ratings in western Europe.

The guide awards one to three stars to a small number of restaurants of outstanding quality. Stars are awarded sparingly; for instance, in the UK and Ireland 2004 guide, out of 5,500 entries, there are 98 with one star ("a very good restaurant in its category"), 11 with two stars ("excellent cooking, worth a detour"), and only 3 with three stars ("exceptional cuisine, worth a special journey").

Since 1955, the guide has also highlighted restaurants offering "good food at moderate prices", a feature now called "Bib Gourmand". They must have a menu priced at no more than ?28 in the case of the UK, or 40 in Ireland. The name comes from Bib (Bibendum), the Michelin Man, Michelin's logo for over a century.

The guide also recognizes many restaurants without any stars or Bib Gourmands. These restaurants are usually rated solely on the scale of "forks and knives". The forks and knives rating is given to all restaurants recognized in the guide, and range from one to five. One fork and knife being "Quite comfortable restaurant" and five being "Luxurious restaurant". If the forks and knives are colored red they designate the restaurant to be "pleasant" as well. The forks and knives scale is designated to speak of the overall comfortability and quality of the restaurant, however any listing in the guide requires a relatively high standard of the kitchen as well.

Restaurants, independently of their other ratings in the guide, can also receive a number of other symbols next to their listing. The coins are given to restaurants that serve a menu for a certain price or less. The price depends on the local price-standard. In France the required price is currently 16.50 euros. Interesting view or Magnificent view, designated by a black or red symbol, are given to restaurants that offer dining with a view. The grapes are given to restaurants that serve a somewhat interesting assortment of wine.

Controversy

The Michelin Guides have been the centre of various controversies. Significantly, the inspectors use secret criteria, unknown to even the most experienced chefs.

Loiseau affair

In February 2003, Bernard Loiseau, a prominent French chef with a history of bipolar disorder, committed suicide when his widely-admired restaurant C?te d'Or in Saulieu, Burgundy, was rumoured to be in danger of a downgrade by Michelin from three to two stars. However, most news reports attributed this suicide to a downgrade by the rival Gault Millau guide, the Michelin guide having stated he would not be downgraded.

Allegations of lax inspection standards

Pascal R?my, a Michelin inspector, wrote a tell-all book in 2004, claiming that Michelin had become extremely lax in its standards. He gave evidence that, though the guide claims to visit all 4,000 reviewed restaurants every 18 months in order to keep the guide up to standards, they are actually visited about every 3.5 years, unless a specific complaint had been made. R?my's employment was terminated. He brought a court case for unfair dismissal, which was unsuccessful.

Accusations of bias

As the Michelin Guide is published by a French company, some US food critics have denounced the rating system as inherently biased toward French cuisine. When the Michelin Guide released the first edition of the New York City guide, many American media sources, including Steven Kurutz of the New York Times, claimed the complete omission of any stars for many otherwise highly reviewed restaurants, specifically Danny Meyer's Union Square Cafe. They also claimed that over half of the restaurants that received two or more stars served French cuisine.

Differing coverage

The extent of the guide's coverage differs greatly between countries. Although the international coverage is growing the guide still only covers the largest cities and the very best of the restaurants available in some countries. The most thoroughly covered country is France, and therefore for instance the city of Paris alone has a larger number of Michelin-rated restaurants than many countries have. This has led to the guide being described as "snobbish" in many countries where only the best and most expensive star-rated restaurants are listed.

A dining car (British English: restaurant car) or diner is a railroad passenger car that serves meals on a train in the manner of a full-service, sit-down restaurant.

It is distinct from other types of railroad food service cars that do not duplicate the full-service restaurant experience, principally cars of various types in which one purchases food from a walk-up counter to be consumed either within the car or elsewhere in the train. Grill cars, in which customers sit on stools at a counter and purchase and consume food cooked on a grill behind the counter are generally considered to be an "intermediate" type of dining car.

Before the inclusion of dining cars in passenger train became common practice, a rail passenger's only option for meal service in transit was to patronize one of the roadhouses often located near the railroad's water stops. Fare typically consisted of nothing more than rancid meat, cold beans, and week-old coffee. Such poor conditions understandably discouraged many Americans from making the journey westward.

Most railroads began offering some form of meal service on their trains even before the completion of the First Transcontinental Railroad. By the mid-1880s, dedicated dining cars were a normal part of all long-distance trains departing from Chicago for points westward, save for those of the Santa Fe, who relied on America's first interstate network of restaurants to feed its passengers en route. The legendary "Harvey Houses," located strategically along the line, served top-quality meals to railroad patrons during water stops and other planned layovers and were favored over in-transit facilities for all trains operating west of Kansas City.

As competition among the railroads intensified, dining car service was taken to new levels. When the Santa Fe rolled out its new "Pleasure Dome"-Lounge cars in 1951, the railroad introduced the travelling public to the Turquoise Room, promoted as "The only private dining room in the world on rails." The room accommodated 12 guests, and could be reserved anytime for private dinner or cocktail parties, or other special functions. The room was often used by the era's celebrities and dignitaries while traveling on the Super Chief.

In one of the most common dining car configurations, one end of the car contains a galley (with a side aisle next to it, so that passengers can pass through that end of the car to other cars of the train) while the other end supports table or booth seating on either side of a center aisle.

Trains with high demand for dining car services have sometimes featured "double-unit dining cars" consisting of two adjacent cars functioning to some extent as a single entity, generally with one car containing a galley plus table or booth seating and the other car containing table or booth seating only.

In the dining cars of Amtrak's modern bilevel Superliner trains, booth seating on either side of a center aisle occupies almost the entire upper level, while the galley is below; food is sent to the upper level on a dumbwaiter.

Dining cars are often prized for the manner in which they enhance the familiar restaurant experience by offering a unique form of visual entertainment, namely the ever-changing views of the world outside. While dining cars are less common today than they were in the past (having been supplemented, or in some cases replaced altogether by other types of food-service cars) they still play a significant role in passenger railroading, especially on medium- and long-distance trains.

Today, a number of tourist-oriented railroads offer dinner excursions to capitalize on the public's fascination with the overall dining car experience.
